The Highlands are heather country. The Scottish Beekeepers Association describes ling heather honey as the honey for which Scotland is perhaps best known; it is so thick and jelly-like that it is hard to extract, which is why it is often sold as comb honey.
The producers listed here are spread across the region. Harvey's Highland Honey, near Tain, is run by a young beekeeper who went full time on leaving school in 2023 and now has around 100 hives, selling blossom, soft set and Scottish heather honey, including heather comb, in shops across the Highlands and online. Loch Ness Honey Company, at Milton of Culloden near Inverness, has apiaries around Inverness and Moray and sells direct. Brora Bees, further north at Brora, now appears on the Sutherland page.
Local associations are the best route to more honey and swarm help: Inverness-shire Beekeepers' Association has held its honey show and sale at Inverness Botanic Gardens, and Easter Ross Beekeepers keep their main apiary near Tain.
