Conwy has one of the longest honey-selling traditions in Britain. Under the town's royal charter, dating from the reign of Edward I, local beekeepers may sell honey within the town walls every 13 September free of charge, and the Conwy Honey Fair still fills the streets each year, run by Conwy Beekeepers on behalf of the town council. As early as the 1830s, writers recorded large quantities of excellent honey sold in Conwy, credited to the heather and wildflowers of the surrounding hills.
That landscape still shapes the honey. In the valley most forage has finished by August, and from then some beekeepers move hives up to the heather on the Carneddau and Tal y Fan for a late crop of ling heather honey, pressed from the comb in time for the fair. Heather honey has a strong, distinctive flavour; a blend of spring rapeseed honey with heather is a local best-seller, and the heather stalls usually have the longest queues on fair day.
