I am a hobby beekeeper, harvesting honey from bees which are hived locally. The bees have access to domestic gardens within the village, to the local hedgerows and verges and to any crops planted by local farmers that take the bee's fancy. I do not mix all a seasons harvest together, I keep the products of one or perhaps two colonies separate. Each bucket can therefore be different in aroma, taste and viscosity dependant on which flowers the bees were working at that time.
