Local Honey RutlandSt Ambrose's SkepLE15 8AARaw, coarse-filtered honey from St Ambrose's Skep, a small independent beekeeping duo whose hives sit around the borders of Rutland, Leicestershire and Lincolnshire. Their Buckfast bees live in National hives and forage local woodland, parkland, hedgerows and meadows.

The honey is sold by season. The spring honey, gathered from March to June from sources such as blackthorn, hawthorn, fruit blossom and oilseed rape, is pale gold and tends to set more firmly than the summer honey. The Rutland–Leicestershire border summer honey is golden amber and runny with a rich, fruity flavour from white clover, bramble, fruit trees and herbs such as lavender and rosemary. There is also a lighter Stamford summer honey from hives at Southorpe, just over the border in Lincolnshire. None of it is heated, so it will naturally set in time.
