Caithness is exposed, windswept country, and beekeepers here don't produce much honey – but what they do produce has a reputation. Carol Gunn of Caithness Honey at Ackergill, near Wick, won the E Graham Burtt Silver Cup at the National Honey Show for the best two sections of ling heather comb, a trophy last brought to the county in 1991 by the renowned Caithness beekeeper Bill Bruce. The same year she was named Britain's finest small-scale honey producer in a competition judged by British Beekeepers Association experts. Fableman's Highland Honey is newer: a small-batch business on a three-acre croft, where an orchard and pollinator-friendly plants have been put in for the bees, selling single-origin honey online, at local craft fairs and through independent shops.
Local beekeepers meet through the Olrig and District Beekeepers' Association at Castletown, which holds its own honey show, and Caithness honey is often sold through local butchers, fishmongers and delicatessens.
