Flintshire's one producer, Little Honey House, is run by Eoin and Beth Donnelly, weekend-and-evening beekeepers based in Deeside who trained with the Cheshire Beekeepers Association just over the border. They keep over 20 hives on three sites – in Deeside, at Caergwrle near Wrexham and at Llanarmon-yn-Iâl near Mold – and some honey is jarred by site, so a three-jar gift set lets you taste the difference between them. The bees work fields, gardens and hedgerows from early spring to autumn, from snowdrops through apple and cherry blossom to summer borage and autumn ivy. The honey is never pasteurised or micro-filtered, and is sold direct for collection and at local markets.
