Local Honey County DownHillsborough HoneyHillsborough, County Down, BT26 6AAUnprocessed local honey from a small beekeeper with hives in the Hillsborough (BT26) area of County Down – not heated, blended or homogenised, and never bulked out. Phill moved to Hillsborough from Bristol in 2021 and, unable to bring his bees with him after Brexit, rebuilt his apiary from two small nucleus colonies.

Because the honey isn't blended, each batch reflects what the bees were foraging at the time, and depending on the harvest there may be runny, soft-set or naturally set honey, with cut comb when available. Honey with slightly too much water to sell as table honey is sold separately as baker's honey – strained the same way and still unheated.
