Beekeeping began as a hobby after a course at Sparsholt College and grew into a business, and she runs it on the same principles as any other farming: give the bees somewhere clean and dry to live, water, food and freedom from disease, and they will make the most of the weather.

As well as jars of honey, she produces cut comb, beeswax candles and beeswax polish, and supplies honey as wedding favours. Mary was one of the founders of the Isle of Wight farmers' markets and ran a stall at the Newport market for 23 years until the markets closed in 2022.

The honey is sold through island shops including Brighstone Village Shop, Farmhouse Fayre in Newport, Harvey Browns at Arreton and Orchard Brothers at Freshwater Bay, and in summer at Warren Farm and The Needles at Alum Bay and Grange Farm near Brighstone.
